Ingredients

Scale
  • 1 package (17.3 oz) puff pastry sheets (2 sheets)
  • 2 cups fresh button or cremini mushrooms, finely chopped
  • 4 oz cream cheese, softened
  • 1 cup grated mozzarella cheese
  • 1 cup grated cheddar cheese
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley or thyme, chopped
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Sauté the chopped mushrooms until golden brown and moisture is released, about 5-7 minutes. Add minced garlic in the last minute of cooking.
  3. In a mixing bowl, combine sautéed mushrooms, cream cheese, mozzarella, cheddar, fresh herbs, salt, and pepper. Mix until creamy yet chunky.
  4. Roll out puff pastry on a floured surface to about 1/8 inch thick; cut into squares or circles.
  5. Place a spoonful of the mushroom-cheese mixture on each pastry piece. Fold and seal tightly.
  6. Brush with beaten egg and bake for 15-20 minutes until golden brown and puffed.
