- 4 large flour tortillas (or whole wheat)

- 1 tsp chili powder
- Salt to taste
Instructions
- Preheat oven to 400°F (200°C). Cut the butternut squash in half, scoop out seeds, brush with olive oil, season with salt and pepper, and place cut-side down on a baking sheet.
- Roast for 20-25 minutes until tender. Let cool slightly, then scoop flesh into a bowl and mash until smooth. Mix in black beans, cumin, chili powder, and salt.
- Heat a skillet over medium heat. Place one tortilla in the skillet and spread an even layer of the squash mixture followed by shredded cheese. Top with another tortilla.
- Cook for about 3-4 minutes until golden brown; flip and cook until both sides are crispy and cheese has melted.
