For the Cauliflower
- 1 small cauliflower (florets)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
For the Tacos
- 8 small tortillas (corn or flour)
- 1 cup shredded cabbage
- ½ cup diced avocado
- ¼ cup chopped red onion
- ¼ cup fresh cilantro
- 1 lime (cut into wedges)
For the Sauce
- ½ cup Greek yogurt or sour cream
- 1 tbsp lime juice
- ½ tsp garlic powder
- ½ tsp hot sauce (optional)
- Salt to taste
Instructions
1️⃣ Roast the Cauliflower: Preheat oven to 200°C (400°F). Toss cauliflower with olive oil, smoked paprika, chili powder, cumin, garlic powder, and salt. Spread on a baking sheet and roast for 20-25 min until golden and crispy.
2️⃣ Make the Sauce: In a small bowl, mix Greek yogurt (or sour cream) with lime juice, garlic powder, and hot sauce. Adjust salt to taste.
3️⃣ Assemble the Tacos: Warm tortillas, then fill each with roasted cauliflower, shredded cabbage, diced avocado, red onion, and a drizzle of creamy sauce.
4️⃣ Serve & Enjoy: Garnish with fresh cilantro and a squeeze of lime!
