  • 28 oz canned diced tomatoes
  • 4 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano

Instructions

  1. In a large pot over medium heat, sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Push onions aside and add ground sausage; cook until browned (about 7 minutes), breaking it apart as it cooks.
  3. Stir in diced tomatoes (with juices) and chicken broth; bring to a simmer.
  4. Once simmering, add broken lasagna noodles. Stir occasionally until tender (approximately 10 minutes).
