  • 1 can (14 oz) full-fat coconut milk
  • 2 cups chopped kale
  • 2 medium carrots, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. Dice carrots and onion, and mince garlic.

  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. About 15 minutes before serving, stir in chopped kale until wilted.
