Ingredients
Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
Cheesecake Filling:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup sour cream
Strawberry Topping:
- 1 cup fresh strawberries, chopped
- 2 tbsp sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch + 1 tbsp water (for thickening)
Instructions
1️⃣ Preheat oven to 325°F (163°C) and line a 9×9-inch baking pan with parchment paper.
2️⃣ Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes. Let cool.
3️⃣ Prepare the filling: Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Mix until creamy.
4️⃣ Bake: Pour filling over the crust and bake for 25 minutes until set. Let cool completely.
5️⃣ Make the strawberry topping: Heat strawberries, sugar, and lemon juice in a saucepan. Mix cornstarch with water and stir in to thicken. Let cool.
6️⃣ Assemble & chill: Spread strawberry topping over the cheesecake, then refrigerate for at least 2 hours before slicing into bar
