Ingredients

Scale
  • 1 lb lean ground turkey
  • 4 medium zucchinis (sliced thin)
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 2 large eggs
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Slice zucchinis lengthwise into thin strips, salt them, and let sit on paper towels to draw out moisture.
  3. In a skillet over medium heat, cook the ground turkey until browned; drain excess fat.
  4. In a bowl, mix ricotta, eggs, Italian seasoning, salt, and pepper until smooth.
  5. Layer marinara sauce in the baking dish, followed by zucchini slices, half of the turkey mixture, and half of the ricotta mixture. Repeat layers ending with zucchini on top.
  6. Sprinkle mozzarella cheese over the final layer and bake for 30-35 minutes until bubbly and golden.
