Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss cubed yams with 2 tablespoons of olive oil, salt, and pepper. Spread them on a lined baking sheet.
- Roast yams for 25-30 minutes until tender and lightly browned, flipping halfway through.
- Massage chopped kale with the remaining olive oil, lemon juice, salt, and pepper in a large bowl until softened.
- Once the yams are roasted and slightly cooled, combine them with the massaged kale. Drizzle with maple syrup if desired.
