Ingredients

  • 2 medium yams (about 2 cups, peeled and cubed)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss cubed yams with 2 tablespoons of olive oil, salt, and pepper. Spread them on a lined baking sheet.
  3. Roast yams for 25-30 minutes until tender and lightly browned, flipping halfway through.
  4. Massage chopped kale with the remaining olive oil, lemon juice, salt, and pepper in a large bowl until softened.
  5. Once the yams are roasted and slightly cooled, combine them with the massaged kale. Drizzle with maple syrup if desired.
