Ingredients

Scale
  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 lb shrimp, peeled and deveined
  • 2 medium yellow onions, chopped
  • 2 medium carrots, sliced into thick rounds
  • 4 cloves garlic, minced
  • 1 cup dry red wine
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce

Instructions

  1. 1. Heat oil in a Dutch oven over medium-high heat. Sear the beef until browned on all sides (about 5 minutes). Remove and set aside.
  2. 2. In the same pot, sauté onions and carrots until soft (about 6 minutes). Add garlic and sauté for an additional minute.
  3. 3. Deglaze with red wine, scraping up browned bits from the bottom of the pot; simmer for 2 minutes.
  4. 4. Return beef to the pot along with beef broth and Worcestershire sauce. Bring to a gentle boil, reduce heat to low, cover, and simmer for 1 hour.
  5. 5. Stir in shrimp and cook until pink and cooked through (about 5 minutes).
  6. 6. Serve hot, garnished with fresh herbs if desired.
