Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tsp olive oil
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 canned chipotle peppers in adobo sauce (adjust for spice)
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 cup low-sodium chicken broth
- 2 cups shaved cabbage
- Fresh cilantro, chopped for garnish
Instructions
- Set Instant Pot to “Sauté” mode and heat olive oil. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook until fragrant.
- Add chicken breasts; season with salt and pepper and stir to coat.
- In a bowl, mix chipotle peppers, diced tomatoes, and chicken broth; pour over chicken in the pot.
- Seal the lid and set to “Manual” high pressure for 15 minutes. Release pressure carefully after cooking.
- Remove chicken and shred using two forks; return shredded chicken to pot and stir.
- Serve over shaved cabbage, garnished with cilantro.
