Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 lb baby potatoes, halved
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 2 tbsp olive oil
- Salt & pepper (to taste)
Honey Mustard Sauce:
- ¼ cup honey
- 3 tbsp Dijon mustard
- 1 tbsp whole-grain mustard (optional)
- 1 tbsp apple cider vinegar
- 2 cloves garlic, minced
- ½ tsp paprika
- ½ tsp salt & pepper
Instructions
1️⃣ Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2️⃣ Prepare the honey mustard sauce: Whisk together honey, mustards, vinegar, garlic, paprika, salt, and pepper.
3️⃣ Season & arrange: Toss potatoes, broccoli, and carrots with olive oil, salt, and pepper. Spread evenly on the baking sheet.
4️⃣ Add chicken: Place chicken breasts on the sheet and brush generously with the honey mustard sauce.
5️⃣ Bake: Roast for 25-30 minutes until the chicken is golden and cooked through (internal temp: 165°F/75°C).
