Ingredients
For the Salad:
- 2 cups pasta (penne, rotini, or bowtie)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup bell peppers, diced (any color)
- ¼ cup red onion, finely chopped
- ½ cup black olives, sliced
- ½ cup feta cheese, crumbled (or mozzarella cubes)
- ¼ cup fresh parsley, chopped
For the Dressing:
- ¼ cup olive oil
- 2 tbsp red wine vinegar (or lemon juice)
- 1 tsp Dijon mustard
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- Salt & pepper to taste
Instructions
