- 1 cup cherry tomatoes (halved)
- 1 cup cucumbers (diced)

- 2 tbsp freshly squeezed lemon juice

Instructions
- Press the firm tofu between paper towels to remove excess moisture, then cut into cubes.
- In a large bowl, combine diced cucumbers, halved cherry tomatoes, and sliced red onion.
- In a separate bowl, toss marinated tofu with olive oil, lemon juice, oregano, salt, and pepper. Let marinate for at least 15 minutes.
- Gently fold the marinated tofu into the vegetable mixture along with crumbled feta.
- Chill in the refrigerator for about 30 minutes before serving.
