  • 1 cup firm tofu (pressed and cubed)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumbers (diced)
  • ½ medium red onion (thinly sliced)
  • ½ cup crumbled feta cheese (or vegan feta)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Press the firm tofu between paper towels to remove excess moisture, then cut into cubes.
  2. In a large bowl, combine diced cucumbers, halved cherry tomatoes, and sliced red onion.
  3. In a separate bowl, toss marinated tofu with olive oil, lemon juice, oregano, salt, and pepper. Let marinate for at least 15 minutes.
  4. Gently fold the marinated tofu into the vegetable mixture along with crumbled feta.
  5. Chill in the refrigerator for about 30 minutes before serving.
