  • 2 tbsp culinary-grade lavender buds
  • 4 large egg yolks
  • 1/4 cup granulated sugar (plus extra for topping)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat cream, honey, and lavender over medium heat until it simmers. Remove from heat and let infuse for 15 minutes.
  3. Whisk egg yolks and granulated sugar in a bowl until smooth.
  4. Gradually mix the cooled cream into the egg mixture, then stir in vanilla extract.
  5. Strain mixture into ramekins, filling them three-quarters full.
  6. Place ramekins in a baking dish filled with hot water halfway up their sides. Bake for 30-35 minutes until set but jiggles slightly in the center.
  7. Chill in the refrigerator for at least 2 hours before serving. Sprinkle sugar on top and caramelize using a kitchen torch.
