  • 2 cups mini marshmallows
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round baking pans.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and sugar until combined.
  3. In another bowl, mix eggs, buttermilk, melted butter, and vanilla extract until smooth. Combine with dry ingredients until just mixed.
  4. Divide the batter between the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  5. To make the topping, whip heavy cream with mini marshmallows using an electric mixer until soft peaks form.
  6. Once cooled, layer the cake with whipped marshmallow topping in between and spread over the top for a fluffy finish.
