Instructions

- Combine dry ingredients with wet ingredients until a dough forms. Scoop tablespoons of dough into the muffin tin, pressing down to form cups.
- Bake for 10-12 minutes or until golden brown; cool completely.
- In a separate bowl, mix mascarpone with cooled coffee until smooth.
- Fill each cookie cup with the mascarpone mixture and dust with cocoa powder before serving.
