  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup mascarpone cheese
  • 1/4 cup brewed coffee or espresso
  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a mini muffin tin with parchment paper.
  2. In one bowl, mix flour and baking powder. In another bowl, cream together butter and sugar until fluffy; add the egg and mix well.
  3. Combine dry ingredients with wet ingredients until a dough forms. Scoop tablespoons of dough into the muffin tin, pressing down to form cups.
  4. Bake for 10-12 minutes or until golden brown; cool completely.
  5. In a separate bowl, mix mascarpone with cooled coffee until smooth.
  6. Fill each cookie cup with the mascarpone mixture and dust with cocoa powder before serving.
