- 2 lbs Yukon Gold potatoes, cut into 1-inch pieces

- 4 tbsp extra virgin olive oil

- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Spray a baking dish with nonstick spray or drizzle with olive oil.
- In a bowl, toss the potato pieces with olive oil, garlic, salt, pepper, and herbs until well-coated.
- Layer half of the seasoned potatoes in the baking dish. Sprinkle half of the feta over them, then add the remaining potatoes and top with leftover feta.
- Bake for 30-35 minutes until golden brown and crispy, stirring halfway through.
