  • 2 lbs Yukon Gold potatoes, cut into 1-inch pieces
  • 8 oz feta cheese, crumbled
  • 4 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 2 tsp fresh rosemary or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a baking dish with nonstick spray or drizzle with olive oil.
  3. In a bowl, toss the potato pieces with olive oil, garlic, salt, pepper, and herbs until well-coated.
  4. Layer half of the seasoned potatoes in the baking dish. Sprinkle half of the feta over them, then add the remaining potatoes and top with leftover feta.
  5. Bake for 30-35 minutes until golden brown and crispy, stirring halfway through.
  6. Let cool slightly before serving.
