Ingredients

Scale
  • 1 lb beef tenderloin, trimmed
  • 1 sheet puff pastry (thawed)
  • 1 cup cremini mushrooms, finely chopped
  • 2 tsp fresh thyme leaves
  • 1/2 cup sour cream
  • 2 tbsp prepared horseradish
  • 1 egg (for egg wash)
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 400°F (200°C). Finely chop mushrooms and thyme.
  2. In a skillet over medium heat, melt butter and sauté mushrooms and thyme until moisture evaporates, about 5-7 minutes. Let cool.
  3. Season beef tenderloin with salt and pepper; sear in the same skillet for 2-3 minutes on each side until browned. Let rest.
  4. Roll out puff pastry on a floured surface and cut into squares large enough to encase the beef.
  5. Place mushroom mixture on each square, top with a piece of beef, fold over pastry, and seal.
  6. Brush with egg wash and bake on a parchment-lined baking sheet for 20-25 minutes until golden brown.
