- 1 bay leaf

Instructions
- Preheat your oven to 300°F (150°C).
- Season the short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and sear the ribs until browned on all sides (about 3-4 minutes per side). Remove and set aside.
- In the same pot, sauté chopped onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant (about 1 minute).
- Stir in tomato paste and brown sugar, then pour in the beer and beef broth while scraping up browned bits from the bottom. Bring to a simmer.
- Return the short ribs to the pot, cover tightly, and transfer to the oven. Bake for about 3 hours until tender.
