Perfect for family gatherings or cozy weeknight dinners, this recipe offers a comforting blend of flavors and textures that will delight your taste buds. Serve it warm with a side of garlic bread or pasta for an unforgettable meal that brings everyone together around the table.

Ingredients

Scale
  • 2 medium eggplants (about 1.5 lbs), sliced into 1/2-inch rounds
  • 1 tsp salt
  • 3 cups marinara sauce (homemade or store-bought)
  • 16 oz fresh mozzarella cheese, sliced
  • 1 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup olive oil
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups breadcrumbs (Italian seasoned)

Instructions

  1. Salt the Eggplant: Sprinkle salt on each eggplant slice and let sit in a colander for 30 minutes to draw out moisture.
  2. Rinse & Dry: Rinse the salted slices under cold water and pat dry with paper towels.
  3. Bread the Eggplant: Preheat oven to 400°F (200°C). Set up three bowls for flour, beaten eggs, and breadcrumbs. Coat each eggplant slice first in flour, then in egg, and finally in breadcrumbs.
  4. Bake: Place breaded slices on a parchment-lined baking sheet, drizzle with olive oil, and bake for 25-30 minutes until golden brown.
  5. Layer: In a baking dish, spread some marinara sauce at the bottom, layer with eggplant slices, mozzarella, Parmesan, and basil. Repeat layers until all ingredients are used up.
  6. Final Bake: Top with remaining marinara and cheeses; bake for an additional 25-30 minutes until bubbly.
