Ingredients

Scale
  • 8 oz fettuccine or tagliatelle pasta
  • 6 oz thick-cut bacon, chopped
  • 1 cup cooked chestnuts, chopped
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, cook the chopped bacon until crispy, about 6-8 minutes. Drain on paper towels.
  3. In the same skillet, add minced garlic and sauté for 1 minute. Stir in chestnuts until heated through.
  4. Pour in heavy cream, scraping any bits from the pan. Simmer gently before adding Parmesan cheese until melted.
  5. Combine drained pasta with the sauce and bacon, using reserved pasta water to achieve desired creaminess.
  6. Serve garnished with extra Parmesan and black pepper.
