  • 1 cup Greek yogurt
  • 2 tbsp lemon juice

Instructions

  1. In a large bowl, mix ground chicken, onion, 2 cloves of minced garlic, cilantro, cumin, paprika, salt, and pepper until well combined.
  2. Wet your hands slightly and shape the mixture into oblong meatballs about two inches long. Place them on a parchment-lined baking sheet.
  3. Preheat your grill or oven to medium-high heat (375°F). Grill each side for about five minutes until charred or roast in the oven for around twenty minutes until cooked through (internal temp of at least 165°F).
  4. While the koftas are cooking, whisk together Greek yogurt, remaining minced garlic, lemon juice, salt, and pepper in a small bowl until smooth.
