  • 2 medium red apples, chopped
  • 1 cup seedless grapes, halved
  • 1 cup celery, thinly sliced
  • ½ cup walnuts, roughly chopped and toasted
  • ½ cup mayonnaise or Greek yogurt
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the chicken by poaching or grilling until fully cooked (15-20 minutes). Let cool before shredding or cubing.
  2. In a large bowl, combine chopped apples and halved grapes.
  3. Slice celery into thin pieces and chop toasted walnuts; add them to the bowl.
