- 2 medium red apples, chopped
- 1 cup seedless grapes, halved
- 1 cup celery, thinly sliced

- 2 tbsp fresh lemon juice

Instructions
- Cook the chicken by poaching or grilling until fully cooked (15-20 minutes). Let cool before shredding or cubing.
- In a large bowl, combine chopped apples and halved grapes.
- Slice celery into thin pieces and chop toasted walnuts; add them to the bowl.
- In a separate bowl, mix mayonnaise (or Greek yogurt), lemon juice, salt, and pepper until smooth.
- Combine shredded chicken with the fruit and veggie mixture; add the dressing and stir until well-coated.
- Chill in the refrigerator for at least 30 minutes before serving.
