Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Cook pasta shells in salted boiling water until al dente; drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté mushrooms and garlic until tender (about 5 minutes). Season with salt and pepper.
- In a bowl, mix ricotta, sautéed mushroom mixture, Parmesan, sour cream, and herbs until well combined.
- Stuff each shell with the filling and place them in the prepared baking dish.
- Cover with foil and bake for 20–25 minutes. Remove foil for the last 5 minutes to achieve a golden top.
