Ingredients
- 1 cup firm tofu, drained and cut into strips
- 8 rice paper wrappers
- 1 cup bell peppers, julienned
- 1 cup carrots, grated
- 1 cup cucumbers, matchsticked

- ¼ cup fresh cilantro leaves
- 3 tbsp peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tsp chili sauce
Instructions
- Prepare the tofu by draining it and patting dry; cut into thin strips.
- Chop the vegetables: julienne the bell peppers, grate the carrots, and slice the cucumbers.
- Soak each rice paper wrapper in warm water for about 10–15 seconds until pliable.
- Assemble the spring rolls by placing tofu and vegetables at the bottom third of each wrapper, sprinkle with herbs, fold in sides, and roll tightly from bottom to top.
- In a bowl, mix peanut butter, soy sauce, lime juice, and chili sauce until smooth to create the dipping sauce.
- Serve the spring rolls on a platter with the dipping sauce.
