  • 12 jumbo pasta shells
  • 1 lb Italian sausage (mild or spicy)
  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cook the jumbo pasta shells in salted boiling water until al dente, then drain and set aside.
  3. In a skillet over medium heat, brown the Italian sausage, breaking it apart until cooked through. Drain excess fat.
  4. In a bowl, mix the cooked sausage with ricotta, half of the mozzarella, Parmesan, parsley, salt, and pepper until well combined.
  5. Stuff each shell with about two tablespoons of the filling and place them seam-side up in the baking dish.
  6. Spread marinara sauce evenly over the stuffed shells and sprinkle with remaining mozzarella. Cover with foil and bake for 25 minutes; remove foil for the last 5 minutes until golden.
