Ingredients

Scale
  • 2 lbs beef short ribs
  • 3 large yellow onions, sliced
  • 6 cups low-sodium beef broth
  • 1 cup dry red wine
  • 3 sprigs fresh thyme (or 1 tsp dried thyme)
  • 1 French baguette, sliced
  • 2 cups Gruyère cheese, shredded

Instructions

  1. Heat oil in a large pot or Dutch oven over medium-high heat. Brown the beef short ribs on all sides; remove and set aside.
  2. In the same pot, add sliced onions with a pinch of salt. Cook over medium-low heat until caramelized (about 25-30 minutes), stirring occasionally.
  3. Deglaze the pot with red wine, scraping up browned bits; simmer until reduced by half.
  4. Return short ribs to the pot, add beef broth and thyme. Bring to a boil, then reduce heat and simmer for about 2 hours until meat is tender.
  5. While soup simmers, toast baguette slices lightly.
  6. Serve soup in oven-safe bowls topped with toasted baguette slices and Gruyère cheese. Broil until cheese is bubbly and golden.
