  • 9 no-boil lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups fresh mozzarella cheese, shredded
  • ½ cup grated Parmesan cheese
  • 1 cup shrimp, peeled and deveined
  • 1 cup scallops
  • 1 cup crab meat
  • 3 cloves garlic, minced
  • 2 cups fresh spinach (or frozen)
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a saucepan over medium heat, melt butter and sauté minced garlic until fragrant. Pour in heavy cream and stir until simmering; season with salt and pepper.
  3. In another skillet, cook the seafood medley over medium heat for about five minutes until just cooked through.
  4. In a bowl, mix ricotta cheese with spinach, salt, and pepper.
  5. Spread some cream sauce at the bottom of the baking dish. Layer with noodles, ricotta mixture, seafood medley, mozzarella, and more sauce. Repeat layers until all ingredients are used.
  6. Cover with foil and bake for 30 minutes; uncover for an additional ten minutes to allow cheese to bubble.
