Ingredients

Scale
  • 14 oz firm tofu, pressed and cubed
  • 2 tbsp honey
  • 3 tbsp low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup zucchini, sliced
  • 1/2 cup toasted cashews
  • 2 green onions, chopped
  • 2 tbsp oil for sautéing

Instructions

  1. Prepare the Tofu: Press tofu to remove moisture and cut into bite-sized cubes.
  2. Marinate: Mix honey, soy sauce, garlic, and ginger in a bowl. Add tofu cubes; marinate for at least 30 minutes.
  3. Sauté Vegetables: Heat oil in a skillet over medium-high heat. Sauté bell peppers and zucchini until tender-crisp (5-7 minutes).
  4. Cook Tofu: Push vegetables aside; add marinated tofu and cook until golden brown on all sides (5-7 minutes). Pour remaining marinade over tofu.
  5. Toast Cashews: In a separate pan, toast cashews until golden brown (3-5 minutes).
  6. Combine & Serve: Fold toasted cashews into the stir-fry before serving. Drizzle with leftover marinade if desired.
