  • ¼ cup unsalted butter (cold, cubed)
  • ½ cup rolled oats (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, mix pumpkin puree, eggs, melted butter, and vanilla until smooth.
  4. Combine wet ingredients into dry ingredients until just blended.
  5. For the streusel topping, mix brown sugar and cinnamon with cold butter until crumbly; add oats if desired.
  6. Pour half the batter into the loaf pan; sprinkle half the streusel on top. Add remaining batter and finish with more streusel.
  7. Bake for approximately 50-60 minutes or until a toothpick inserted comes out clean.
