- ¼ cup unsalted butter (cold, cubed)

Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, baking powder, baking soda, and salt.
- In another bowl, mix pumpkin puree, eggs, melted butter, and vanilla until smooth.
- Combine wet ingredients into dry ingredients until just blended.
- For the streusel topping, mix brown sugar and cinnamon with cold butter until crumbly; add oats if desired.
- Pour half the batter into the loaf pan; sprinkle half the streusel on top. Add remaining batter and finish with more streusel.
