- 1 cup mixed bell peppers, chopped
- 1 cup cucumber (preferably English), diced

- 2 tbsp freshly squeezed lemon juice
- 1 tsp garlic powder
Instructions
- Rinse quinoa under cold water using a fine mesh strainer.
- In a saucepan, combine rinsed quinoa with two cups of water or vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until liquid is absorbed.
- While quinoa cooks, chop bell peppers, cucumber, and red onion.
