  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup mixed bell peppers, chopped
  • 1 cup cucumber (preferably English), diced
  • 1/2 cup red onion, finely chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp garlic powder

Instructions

  1. Rinse quinoa under cold water using a fine mesh strainer.
  2. In a saucepan, combine rinsed quinoa with two cups of water or vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until liquid is absorbed.
  3. While quinoa cooks, chop bell peppers, cucumber, and red onion.
  4. Fluff cooked quinoa in a large bowl and mix in chickpeas and vegetables.
