Ingredients
- 9 lasagna noodles
- 2 cups fresh spinach, chopped
- 1 cup button or cremini mushrooms, diced
- 1 cup whole milk ricotta cheese
- 1 ½ cups shredded mozzarella cheese
- 2 cups marinara sauce
- 1 tsp garlic powder
- Salt to taste
- Pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and coat a baking dish with nonstick spray.
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, heat olive oil and sauté mushrooms until golden brown. Add spinach until wilted, seasoning with garlic powder, salt, and pepper.
- In a bowl, mix ricotta cheese with half of the mozzarella and fold in the sautéed veggies until combined.
- Spread marinara sauce at the bottom of the baking dish. Place about two tablespoons of filling at one end of each noodle and roll tightly. Place seam-side down in the dish.
- Cover roll-ups with remaining marinara sauce and sprinkle with mozzarella cheese. Bake for 25-30 minutes until bubbly and golden brown.
