  • 9 lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup button or cremini mushrooms, diced
  • 1 cup whole milk ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 1 tsp garlic powder
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and coat a baking dish with nonstick spray.
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, heat olive oil and sauté mushrooms until golden brown. Add spinach until wilted, seasoning with garlic powder, salt, and pepper.
  4. In a bowl, mix ricotta cheese with half of the mozzarella and fold in the sautéed veggies until combined.
  5. Spread marinara sauce at the bottom of the baking dish. Place about two tablespoons of filling at one end of each noodle and roll tightly. Place seam-side down in the dish.
  6. Cover roll-ups with remaining marinara sauce and sprinkle with mozzarella cheese. Bake for 25-30 minutes until bubbly and golden brown.
