Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, add olive oil. Sear chicken thighs for about 5 minutes on each side until golden brown. Remove and set aside.
  3. In the same pot, sauté chopped onions until translucent (about 3–4 minutes), then add minced garlic for an additional minute.
  4. Stir in rice, smoked paprika, thyme, salt, and pepper until well combined.
  5. Pour in chicken broth, scraping any bits from the bottom of the pot. Bring to a gentle boil.
  6. Return the chicken thighs on top of the rice, cover with a lid, and reduce heat to low. Simmer for 20–25 minutes until rice is cooked and fluffy.
  7. Fluff with a fork before serving and enjoy!
