  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté minced garlic until fragrant (about 1 minute). Add shrimp, season with salt and pepper, and cook until pink (about 3 minutes). Remove shrimp from pot.
  2. In the same pot, add chicken broth and bring to a boil. Add orzo and cherry tomatoes. Reduce heat and simmer until orzo is al dente (about 8 minutes), stirring occasionally.
  3. Lower heat further, add heavy cream, and let bubble gently for about 2 minutes. Stir in Parmesan cheese until melted.
  4. Add spinach until wilted (about 2 minutes) and return shrimp to the pot. Mix until well combined.
  5. Taste and adjust seasoning as needed. Serve with extra cheese and fresh herbs if desired.
