Ingredients
- 3–4 boneless, skinless chicken breasts (about 1 pound)

- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 can (14.5 oz) diced tomatoes, drained
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick spray or olive oil.
- In a large skillet over medium heat, add olive oil and sauté onions and garlic until softened. Add chicken breasts and cook until no longer pink, about 5-7 minutes per side. Season with salt and pepper.
- In a bowl, combine heavy cream, drained diced tomatoes, cumin, chili powder, and mix well.
- Layer the casserole: Spread some sauce at the bottom of the baking dish, add a layer of tortillas, then chicken pieces, more sauce, and top with shredded cheese. Repeat until all ingredients are used.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil in the last five minutes to allow the cheese to brown.
- Let cool slightly before serving; drizzle remaining sauce over each portion.
