Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 can (14.5 oz) diced tomatoes, drained
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick spray or olive oil.
  2. In a large skillet over medium heat, add olive oil and sauté onions and garlic until softened. Add chicken breasts and cook until no longer pink, about 5-7 minutes per side. Season with salt and pepper.
  3. In a bowl, combine heavy cream, drained diced tomatoes, cumin, chili powder, and mix well.
  4. Layer the casserole: Spread some sauce at the bottom of the baking dish, add a layer of tortillas, then chicken pieces, more sauce, and top with shredded cheese. Repeat until all ingredients are used.
  5. Cover with aluminum foil and bake for 25 minutes. Remove the foil in the last five minutes to allow the cheese to brown.
  6. Let cool slightly before serving; drizzle remaining sauce over each portion.
