- Scoop tablespoon-sized balls onto prepared baking sheets, spacing them apart. Slightly flatten each ball.
- Bake for about 10 minutes until edges are golden but centers are soft. Top half of cookies with mini marshmallows and bake for an additional minute until puffed.
- Let cool before sandwiching with another cookie half.
