  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 cup long-grain white rice
  • 1 cup fresh cilantro
  • 12 green chilies (jalapeños), seeds removed
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken with salt and pepper. Heat olive oil in a skillet and sear chicken for 3 minutes on each side until golden brown.
  2. In a saucepan, combine rice and water (2 cups) and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until tender.
  3. Blend cilantro, green chilies, garlic, lime juice, and a splash of water until smooth.
  4. Place seared chicken in an oven-safe dish, pour half the green sauce over it, and bake for 20 minutes or until cooked through (165°F/75°C).
  5. Fluff the rice with a fork and serve topped with chicken and remaining sauce.
