  • 2 cups penne pasta (uncooked)
  • 2 cups pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup cooked pepperoni or sausage
  • 1 cup chopped bell peppers
  • 1/2 cup chopped onions
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C) and lightly coat a 9×13 inch baking dish with nonstick spray.
  2. Boil salted water in a large pot and cook the penne pasta until al dente (about 7-9 minutes). Drain and set aside.
  3. In a large mixing bowl, combine cooked pasta, pizza sauce, half of the mozzarella and cheddar cheeses, meats, vegetables, and half of the Italian seasoning. Mix well.
  4. Layer half of the pasta mixture in the baking dish; sprinkle with some cheese, then add the remaining pasta on top. Finish with the rest of the cheese blend.
  5. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden brown.
  6. Allow to cool for a few minutes before slicing into squares or scooping servings onto plates.
