  • 2 cups dry red wine (Cabernet Sauvignon recommended)
  • 2 cups low-sodium beef broth
  • 2 medium yellow onions, chopped
  • 4 garlic cloves, minced
  • 2 large carrots, chopped
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 325°F (160°C).
  2. 2. In a large Dutch oven over medium-high heat, heat olive oil. Season short ribs with salt and pepper and brown on all sides (about 3-4 minutes each). Remove and set aside.
  3. 3. In the same pot, sauté onions and carrots until soft (5-7 minutes). Add minced garlic and cook for an additional minute.
  4. 4. Deglaze the pot with red wine, scraping up any browned bits. Simmer for 5 minutes.
  5. 5. Return short ribs to the pot and add enough beef broth to cover halfway. Add thyme and bay leaves.
  6. 6. Cover and transfer to the oven. Braise for approximately 3 hours until meat is tender.
