  • 1 whole sea bass (about 2 lbs)
  • 2 cups coarse sea salt
  • 2 medium lemons, sliced
  • 1 cup fresh herbs (parsley and thyme)
  • 1 tsp whole peppercorns
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Clean the sea bass under cold water and pat dry thoroughly.
  3. Stuff the cavity of the fish with lemon slices, fresh herbs, and crushed peppercorns.
  4. In a bowl, mix coarse sea salt with enough water to resemble wet sand. Spread half on the baking sheet as a base.
  5. Place the fish on top of the salt bed and cover completely with the remaining salt mixture, pressing gently to form a crust.
  6. Bake for 25-30 minutes until the crust is crackling. Let rest briefly before cracking open to serve.
