  • 100g active sourdough starter
  • 10g sea salt

Instructions

  1. In a large bowl, mix 500g flour, 350g water, and 100g sourdough starter until no dry spots remain. Cover and let rest for 1 hour.
  2. Sprinkle in 10g salt and fold the dough until fully incorporated.
  3. Cover the bowl and let it bulk ferment at room temperature for 4 hours, performing stretch-and-fold techniques every hour.
  4. Turn out the dough onto a floured surface and shape it into a round loaf.
  5. Place in a floured proofing basket or bowl, cover, and let rise for 2 hours or overnight in the fridge.
  6. Preheat the oven to 450°F (232°C) with a Dutch oven inside for half an hour.
  7. Carefully transfer the dough to the hot pot, cover with the lid, and bake for 30 minutes. Remove the lid and bake for an additional 15-20 minutes until golden brown.
  8. Cool on wire racks before slicing.
