Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  3. Roll out thawed puff pastry sheets on a floured surface and cut into squares (3×3 inches).
  4. Place about 1 tablespoon of the spinach-garlic mixture in the center of each square, topped with shredded mozzarella.
  5. Fold each square diagonally into triangles and pinch the edges tightly to seal.
  6. Arrange bites on the prepared baking sheet, brush lightly with olive oil, and bake for 15-20 minutes or until golden brown.
