  • ¾ cup granulated sugar
  • ¾ cup unsalted butter, softened
  • 16 oz cream cheese, room temperature
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 can (21 oz) tart cherry pie filling

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. In a bowl, mix flour, sugar, and melted butter until crumbly. Reserve 1 cup for topping.
  3. Press the remaining mixture into the pan and bake for 10 minutes.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla.
  5. Spread half the cheesecake mixture over the crust, add dollops of cherry filling, then top with remaining cheesecake mixture.
