- ¾ cup granulated sugar
- ¾ cup unsalted butter, softened
- 16 oz cream cheese, room temperature
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 can (21 oz) tart cherry pie filling
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
- In a bowl, mix flour, sugar, and melted butter until crumbly. Reserve 1 cup for topping.
- Press the remaining mixture into the pan and bake for 10 minutes.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla.
- Spread half the cheesecake mixture over the crust, add dollops of cherry filling, then top with remaining cheesecake mixture.
- Sprinkle reserved crumbs on top and bake for 30-35 minutes until set but slightly jiggly in the center.
- Cool completely before slicing into squares.
