Ingredients
- 2 tbsp olive oil
- 1 lb ground beef or sausage
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 28 oz can diced tomatoes
- 4 cups low-sodium beef broth
- 8 oz lasagna noodles, broken into pieces
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
Instructions
- In a large pot over medium heat, heat olive oil. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic until fragrant.
- Add ground beef or sausage to the pot and cook until browned, breaking it up as it cooks.
- Pour in canned diced tomatoes with juices and beef broth. Stir in Italian seasoning along with salt and pepper; let simmer.
- Once bubbling, break lasagna noodles into small pieces and add to the pot. Cook until noodles are tender, about 10 minutes.
- Just before serving, stir in dollops of ricotta cheese and top each bowl with shredded mozzarella.
