This recipe combines tender beef simmered in rich red wine with the creamy texture of ripe avocados, creating a comforting yet healthy meal. Perfect for cozy family dinners or impressing guests, this dish offers a unique blend of flavors that will leave everyone wanting more.

Ingredients

Scale
  • 1.5 lbs beef chuck roast, cut into 1-inch cubes
  • 1 cup dry red wine
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 8 oz button mushrooms, sliced
  • 2 ripe but firm avocados, diced
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. 1. Season the beef cubes with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef in batches until browned on all sides (about 3 minutes per side). Remove and set aside.
  2. 2. In the same pot, sauté garlic, carrots, and mushrooms for about 5 minutes until softened.
  3. 3. Deglaze the pot with red wine, scraping up any brown bits. Let it simmer for about 2 minutes.
  4. 4. Return the beef to the pot along with thyme and bay leaves. Add enough broth to submerge the beef (about 2 cups), bring to a simmer, then reduce heat to low and cover. Cook for 2 hours until tender.
  5. 5. Serve hot over rice or mashed potatoes, topping each serving with diced avocado just before serving.
