- 1 tsp fresh thyme (or ½ tsp dried thyme)
- 2 bay leaves

Instructions
- 1. Season the beef cubes with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef in batches until browned on all sides (about 3 minutes per side). Remove and set aside.
- 2. In the same pot, sauté garlic, carrots, and mushrooms for about 5 minutes until softened.
- 3. Deglaze the pot with red wine, scraping up any brown bits. Let it simmer for about 2 minutes.
- 4. Return the beef to the pot along with thyme and bay leaves. Add enough broth to submerge the beef (about 2 cups), bring to a simmer, then reduce heat to low and cover. Cook for 2 hours until tender.
- 5. Serve hot over rice or mashed potatoes, topping each serving with diced avocado just before serving.
