Ingredients
- 2 large chicken breasts (halved lengthwise)
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (Panko for extra crunch)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp salt & pepper (to taste)
- 1 egg, beaten
- 2 tbsp olive oil (for frying)
- 1 tbsp butter
- Zest of 1 lemon
- 2 tbsp lemon juice
- 1 tbsp chopped parsley (for garnish)
Instructions
1️⃣ Prepare the chicken: Slice chicken breasts in half lengthwise for thinner cutlets. Season with salt & pepper.
2️⃣ Mix coating: In a bowl, combine Parmesan, breadcrumbs, garlic powder, and Italian seasoning.
3️⃣ Dredge the chicken: Dip each piece into the beaten egg, then coat with the Parmesan mixture.
4️⃣ Cook: Heat olive oil and butter in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through.
5️⃣ Add lemon flavor: Squeeze fresh lemon juice over the chicken and sprinkle with lemon zest.
