- 4–5 lbs bone-in pork shoulder
- 2 cups fresh unsweetened apple cider
- 1 large yellow onion, chopped
- 6 cloves garlic, minced
- 4 sprigs fresh thyme (or 1 tsp dried thyme)
- 1 cinnamon stick
- 2 cups low-sodium chicken broth
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 300°F (150°C).
- Heat olive oil in a Dutch oven over medium-high heat. Season the pork shoulder with salt and pepper. Sear until browned on all sides (about 3 minutes per side). Remove from pot.
- Add chopped onion and minced garlic to the pot; sauté until fragrant (about 2 minutes). Return the pork to the pot.
- Pour in apple cider and chicken broth until submerged halfway. Add the cinnamon stick and thyme sprigs.
- Cover tightly and braise in the oven for about 4 hours or until fork-tender.
- Serve with sauce drizzled on top, alongside mashed potatoes or roasted vegetables.
