Ingredients

Scale
  • 2 lbs boneless skinless chicken thighs
  • 1 cup dried apricots, chopped
  • 1/2 cup sliced almonds, toasted
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1 tsp fresh ginger, grated
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Set the Instant Pot to sauté mode. Heat olive oil and add chopped onions and minced garlic. Sauté for about 3 minutes until fragrant.
  2. Season chicken thighs generously with salt, pepper, cumin, cinnamon, and ginger.
  3. Add seasoned chicken to the pot and brown on both sides for about 5 minutes total.
  4. Stir in dried apricots and chicken broth.
  5. Secure the lid and set the Instant Pot to manual high pressure for 10 minutes. Let the pressure release naturally for 5 minutes before quick releasing any remaining steam.
  6. Carefully open the lid, sprinkle toasted almonds over the chicken, and serve hot.
