Instructions
- 1. Make the dough: In a bowl, mix flour and powdered sugar. Cut in cold vegan butter until crumbly. Gradually add ice water until a dough forms. Wrap in plastic and chill for 30 minutes.
- 2. Prepare the filling: In another bowl, mix fresh blueberries, lemon juice, granulated sugar, and cinnamon until well combined.
- 3. Roll out the dough: Preheat oven to 375°F (190°C). Roll chilled dough to an eighth-inch thickness and cut out ghost shapes using a cookie cutter.
- 4. Assemble the pies: Place spoonfuls of filling on half of each cut-out shape, moisten edges with water, fold over, and crimp to seal.
- 5. Bake: Arrange on a baking sheet lined with parchment paper, sprinkle with granulated sugar, and bake for 25-30 minutes until golden brown.
