- 1 lb (450g) ground beef (or turkey)
- 1 tbsp olive oil
- 1 small onion (diced)
- 3 bell peppers (red, green, yellow – diced)
- 3 cloves garlic (minced)
- 1 can (400g) diced tomatoes
- 1 can (400g) tomato sauce
- 4 cups beef broth
- 1 cup cooked rice (white or brown)
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt & pepper (to taste)
- 1 tbsp Worcestershire sauce
Instructions
1️⃣ Brown the Meat: In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
2️⃣ Sauté Veggies: Add onion, bell peppers, and garlic. Cook for 3-4 minutes until softened.
3️⃣ Simmer the Soup: Pour in diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and seasonings. Bring to a boil, then reduce heat and simmer for 20 minutes.
4️⃣ Add the Rice: Stir in cooked rice and let it heat through for a few minutes. Adjust seasoning if needed.
5️⃣ Serve & Enjoy: Ladle into bowls and garnish with fresh parsley or shredded cheese.
